I love Mexican food and here in Atlanta Georgia there is great Mexican restaurant in Atlantic Station, that I often visit with my friends call Rosa Mexicano. I go there purposely for one and one thing only - the fabulous and tasty Spicy Herbed Guacamole and Chips.

In the restaurant these come as Appetizers but i love it so much, by the time i finish eating it I am just too full for the main meal. At Rosa Mexicano what i love about the restaurant is they make the guacamole right in front of you, so you can instruct whether you like a lil more/less of this ingredient or that ingredient. Since i have watched them do it many times in front of me, I have also learnt how to make it. It took several tries to get it right, but I think i have mastered it now. Today I decided to share the menu here with you all.

First and foremost you need Imusa Molcajete (i call it earthware bowl) which you can buy from Target, Macy's or anywhere online (I got mine from Target for $20).

Ingredients:
- 2 Ripened avocados, halved and pitted 3 Small red radishes, diced ?
- Cup finely chopped cilantro
- Cup snipped fresh chives Kosher salt or table salt, to taste Juice of
- lime Bottled Chipotle Hot Pepper Sauce (optional)

Directions:
- Scoop avocado flesh and add the cilantro, chopped chives, lime juice, and chipotle hot pepper sauce.
- Gently mash with until the desired consistency is reached.
- Fold in diced radishes and season with salt to taste.

And finally you can eat it with any kind of chips you want. Personally i make my own roasted chips I make with plantain (i love my plantains), but that is another recipe i will post here later)
